Do you like to eat a scrummy chicken salad? Chicken salads are made by a plethora of quintessential recipes and they can be quite delightful, as most of the ingredients come from the pantry and the other ingredients from the refrigerator easily serve the purpose of creating a wonderful chicken salad. Today, I will share the easiest salad recipe, which counts amongst one of the healthiest recipes from my cookbook. It simply tastes out of this world and the lovely sprinkling of exotic dressings and seasonings can make it extra special! I often make this salad almost every day, as it barely takes any time to make it and whenever I wish to make an impromptu salad for the guests, I vouch for this recipe mostly!

 

Let’s skim through the various salad’ ingredients (that can be used for substitution in case some ingredients are missing) and here is the method to make this salad in no time!

 

  • Sliced Grapes
  • 1/4 cup raisins
  • 1/2 teaspoon curry powder
  • Dill
  • Chopped pickles
  • A slice of cheddar cheese
  • 1/2 teaspoon dry mustard powder
  • Diced ham & shredded Swiss cheese
  • Cranberries
  • Diced celery
  • 1/2 cup shredded apple

 

How to Prepare the Chicken for the Chicken Salad

This easy chicken salad can use pretty much any kind of chicken as you want, depending upon the number of people you had wish to serve the salad!  I love to prepare the chicken for this salad is by making poached eggs as they taste so tender, succulent and warm. I love the warmth of the poached eggs, as they taste so much like warm, dribbling cheese.

If you have rotisserie chicken or leftover roast chicken in your fridge, it would work perfectly too!

We always store our chicken salad in the refrigerator for almost a week, as long as the freshest taste is retained and it is preserved from perishing. If any unused portion of the chicken is left behind, it is best recommended to refrigerate it well for another salad.

 

Can you Freeze the Chicken Salad?

Unfortunately, mayonnaise doesn’t freeze well and it is the major dressing in this recipe. However, you can always add it at the last stage after the seasonings and chopped nuts are tossed with the salad, along with the diced chicken pieces.

As you prepare the chicken salad, all you need to do is to simply blend the chicken and seasonings with a thick luscious layer of mayonnaise and any other dressings of your choice for an exotically scrumptious flavor. To present it and store it well, this classic chicken salad recipe is perfectly rolled on a bed of lettuce or simply as a sandwich wrap!

Ingredients

  • 2 cups of chopped cooked chicken or leftover chicken
  • A few drops of Kisan cooking oil( to prevent clumps)
  • 2 finely diced scallions
  • 1/3 cup of mayonnaise
  • 2 tablespoons of plain Greek yogurt
  • 1/2 finely diced red pepper
  • 1/3 cup of chopped water chestnuts or diced celery
  • 2 tablespoons of chopped almonds, if desired
  • 1 teaspoon of mustard
  • 1/2 teaspoon of lemon juice
  • Salt & pepper to taste

 

Instructions

Stir together mayonnaise, Greek yogurt, scallions, mustard, lemon juice and sprinkle the salt and pepper according to your taste.

Toss the salad mixture with the remaining salad ingredients to complete the colorful salad. Use a few drops of Kisan cooking oil to avoid any clumping of the ingredients as they are tossed and turned well.

Serve it on a crispy roll of bread by making this appetizing salad wrap or simply place it on a bed of lettuce and enjoy it! I am sure your family would love this delicious recipe!
